Barbecuing isn’t such a “hot” way to cook meat

One chemical group, called HAAs (heterocyclic aromatic amines), forms during high-temperature reactions between substances in muscle tissue.  A recent study of prostate tumor biopsies showed that these HAAs can migrate to the prostate and damage prostate cells.  See here for the study, and tips about ways to reduce the levels of carcinogens in your meat.
