Moroccan Spiced Cauliflower and Chickpea Bake

Bold, vibrant, and completely satisfying, this Moroccan spiced bake is the kind of dish that fills the kitchen with irresistible aromas and has everyone gathered around before it even hits the table. Everything comes together in one baking dish with very little hands-on prep. The cauliflower and chickpeas roast until caramelized and golden, the rice cooks in the same dish soaking up all those spiced drippings until fluffy and fragrant, and a silky, creamy tahini sauce ties everything together beautifully. The combination of earthy, caramelized, fragrant and nutty flavors layered with a variety of textures makes every bite a revelation. It reheats beautifully the next day making it the ideal meal prep dish or a stunning dinner party centerpiece that can be made ahead. Packed with plant-based protein and fiber, powerful antioxidants, and anti-inflammatory compounds — this dish nourishes as deeply as it delights.
Ingredients
For the Marinade:
- 4 tablespoons ras el hanout*
- ¼ cup olive oil
- Juice of 1 lemon
- 2 teaspoon honey
- 2 teaspoons salt
- 1 teaspoon black pepper
*Don't have ras el hanout? Make your own blend:
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoons ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground paprika
- ¼ teaspoon ground nutmeg
- ¼–½ teaspoon ground cayenne (optional, for heat)
For the Roast:
- 1 medium cauliflower, cut into florets
- 1 jar or can (BPA free) chickpeas, 12–15oz, drained and rinsed (use 1 ½-2 jars if not using chicken)
- 4 boneless chicken thighs
For the Rice:
- 1½ cups white rice, rinsed and drained (see notes for alternative grain options)
- 2¼ cups chicken or vegetable stock, or water
- Salt to taste
For the Tahini Sauce:
- ½ cup silken tofu or yogurt
- 3-4 tablespoons tahini
- Juice of 1 lemon
- 1 garlic clove, finely grated or ¼ teaspoon garlic powder
- ½ teaspoon cumin
- 1 teaspoon honey or maple syrup
- 2-4 tablespoons of cold water, plus more as needed to reach a loose drizzleable consistency
- Small handful of fresh cilantro or parsley
- Salt to taste
To Finish:
- Fresh cilantro or parsley, roughly chopped
- Drizzle of extra virgin olive oil
Optional Additional Toppings:
- Pomegranate seeds or pomegranate molasses or raisins
- Harissa
- Toasted almonds or pine nuts

Prep the cauliflower and chickpeas: Remove the outer leaves from the cauliflower and cut out the core. Break or cut into medium florets and slice the stem into bite sized pieces — don't discard the stem, it roasts beautifully and is just as delicious as the florets. Drain and rinse the chickpeas and pat dry with a clean kitchen towel or paper towels.

Marinate: Add all the marinade ingredients directly into the large baking dish (9x13 or larger) and whisk well. Add the cauliflower, chickpeas, and chicken if using and toss until everything is well coated. For the best flavor marinate for at least 30 minutes or up to overnight in the fridge. If you are short on time, tossing everything together and letting it sit while the oven heats up will still produce a wonderfully flavorful dish.

Preheat and roast: Preheat the oven to 425°F / 220°C. Spread the marinated cauliflower, chickpeas, and optional chicken into as even a single layer as possible in the baking dish. Drizzle with a little olive oil. Roast for 25–30 minutes, tossing halfway through, until golden and caramelized and the chicken is cooked through. Remove everything from the dish and set aside on a plate, leaving any drippings and spiced bits behind in the dish.

Cook the rice: Add the rice, stock or water, and a pinch of salt directly into the same baking dish, stirring well to scrape up all the spiced drippings from the bottom. Cover with the lid or tightly with foil and return to the oven, reducing the temperature to 375°F. Cook for 25-30 minutes until the liquid is fully absorbed.

Make the tahini sauce: While the rice cooks, blend in a food processor or a blender the silken tofu or yogurt, tahini, lemon juice, garlic, cumin, honey or maple syrup, and herbs together until completely smooth and creamy. Add cold water one tablespoon at a time until it reaches a loose drizzleable consistency. Taste and adjust seasoning with salt and lemon.

Bring it all together: Remove the lid or foil and arrange the roasted cauliflower, chickpeas, and chicken back on top of the rice. Turn the oven up to 450°F and return the dish uncovered for 6-8 minutes until the rice starts to lightly crisp and everything on top is sizzling and golden.

Finish and serve: Remove from the oven and drizzle the tahini sauce generously over the top. Scatter fresh cilantro or parsley and any optional toppings. Serve straight from the baking dish.
Notes
Alternative Grains:
If you prefer not to use rice, here are a few other grains that work beautifully with the spiced drippings in the pan. Adjust the liquid and cooking time accordingly:
- Farro — use 1½ cups farro with 3 cups of stock or water. Cover and bake at 375°F for 35–40 minutes until tender and chewy.
- Quinoa — use 1½ cups quinoa with 2¼ cups stock or water. Cover and bake at 375°F for 20 minutes until fluffy and the liquid is absorbed.
- Millet — use 1½ cups millet with 3 cups stock or water. Cover and bake at 375°F for 25–30 minutes until tender and fluffy.
- Freekeh — use 1½ cups of freekeh with 3 cups of stock or water. Cover and bake at 375°F for 35–40 minutes until tender.
- Bulgur — use 1½ cups bulgur with 2 cups stock or water. Cover and bake at 375°F for 20–25 minutes until tender.
Make Ahead Note:
This dish is perfect for making ahead. Complete steps 1 through 4 — roast the cauliflower, chicken (if using) and chickpeas and cook the rice — then allow everything to cool and store covered in the fridge for up to 2 days. When ready to serve, arrange the roasted cauliflower and chickpeas back on top of the rice, cover with the lid or foil, and return to a 425°F oven for 15–20 minutes to heat through. Then uncover, turn the oven up to 450°F and finish for 6-8 minutes until everything on top is sizzling and golden. The tahini sauce can be made ahead and will keep in the fridge for up to 3 days. Give it a good stir and add a splash of water to loosen if needed before serving.
