Oat Flour Irish Soda Bread (with Raisins & Caraway Seeds)

Ingredients:

  • 1 cup oat flour*
  • 1 ¼ cup all-purpose flour (or gluten-free all-purpose flour)
  • ¼ cup old-fashioned rolled oats, divided
  • 1 tablespoon ground flaxseed
  • 1 teaspoon baking soda
  • 2 teaspoons caraway seeds, divided
  • ¼ teaspoon salt
  • ½ cup dairy or non-dairy milk
  • ½ cup plain, nonfat yogurt or non-dairy yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • ¼ cup golden raisins

Utensils:

  • Medium mixing bowl
  • Small mixing bowl
  • Measuring spoons and cups
  • Mixing spoon
  • Small baking sheet or pan
  • Paring knife

Directions:

  1. Preheat the Oven:
    Preheat your oven to 400°F. Line a small baking sheet with parchment paper and set aside.

  2. Prepare Dry Ingredients:
    In the medium bowl, combine oat flour, all-purpose flour, half of the old-fashioned oats, ground flaxseed, baking soda, half of the caraway seeds, and salt. Stir to mix evenly.

  3. Combine Wet Ingredients:
    In the small bowl, whisk together the milk, yogurt, lemon juice, and olive oil until smooth.

  4. Form the Dough:
    Add the wet ingredients to the dry mixture and stir to combine. Gently fold in the raisins while mixing. Once the dough holds together, transfer it to a clean countertop and knead lightly for about 30 seconds.

  5. Shape the Loaf:
    Shape the dough into a slightly flattened round and place it on the prepared baking sheet.

  6. Add Toppings:
    Use your finger or a pastry brush to coat the top of the loaf with a thin layer of the leftover milk and yogurt mixture (or just yogurt if needed). Sprinkle the remaining oats and caraway seeds over the top.

  7. Score the Bread:
    Using a sharp paring knife, score a cross on the top of the loaf to allow for even baking.

  8. Bake:
    Place the bread in the preheated oven and bake for 30 minutes. Set a timer so you can attend to other tasks without forgetting to check it.

  9. Cool & Serve:
    Remove from the oven and let cool for 10 minutes before handling or slicing. Enjoy warm or at room temperature!


Notes:

  • If oat flour is not readily available, blend rolled oats in a food processor until finely ground.
  • For a gluten-free version, use a gluten-free all-purpose flour blend.
  • To make this bread vegan, use non-dairy milk and yogurt.
  • Store wrapped in a tea towel at room temperature for 2–3 days or in an airtight container in the freezer for up to 6 months.
