Vegan Sausage, Kale & White Bean Soup

Ingredients

1 Tablespoon olive oil

½ sweet onion, diced

2 cloves garlic, minced

8 oz. plant-based sausage*, crumbled

1 15-ounce can of cannellini beans, drained and rinsed

2 Tablespoons whole wheat flour
-
1 quart unsalted vegetable broth

2 stalks kale leaves, ribs removed, leaves chopped

¼ teaspoon fresh ground black pepper

⅛ teaspoon salt

1 Tablespoon lemon juice

Directions

Place a medium (3 qt or more) pot or Dutch oven over medium heat.

Add the oil, onions, garlic, and sausage, and sauté for 10 minutes or until very soft and fragrant.

Add the beans and flour, and stir to coat evenly with the flour.

Next, add in the broth and kale, and turn the heat down to a simmer for another 10 minutes.

Season with pepper and salt, and a splash of lemon juice for balance, and enjoy!
